Vegan pineapple fried rice

This is a vegan spin on a classic Thai recipe. It is a yummy recipe to meal prep for the week ahead, and all made in one pot. You need to try this vegan dinner if you're doing Veganuary this year!

Step one

In a small bowl, mix together the sauce ingredients and set aside.

Step two

In a large skillet over medium heat, add 1 tablespoon of olive oil and the cashews. Cook the cashews until they are lightly toasted. Remove them from the pan and set them aside.

Step three

Add a little more olive oil to the pan along with the onions. Saute for about five minutes. Then, add the garlic and cook for another minute.

Step four

Next, add the bell pepper and peas and continue to cook for another five minutes.

Step five

Finally, add the rice, pineapple, green onions, raisins, and cashews. Pour the sauce over top and stir until combined and heated through.

Step six

Divide into bowls, top with green onions or sesame seeds, and enjoy!
