Vegan Egg Bites (Starbucks Copycat)

Description

These vegan egg bites are the perfect option for busy mornings. Meal prep these on Sunday and you'll be ready with a healthy, energizing, grab-and-go breakfast for the whole week!


Ingredients

Scale
  • Cooking spray
  • 1 - 12 ounce bottle of Just Egg
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup broccoli, cut into small florets
  • 1/2 cup spinach, roughly chopped
  • 4 slices of vegan bacon (I like the brand Litelife)
  • 1/2 cup vegan cheese shreds (I like Violife Cheddar Shreds)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin

Instructions

  1. Preheat your oven to 350°F, and spray a muffin tin generously with cooking spray.
  2. Steam the broccoli on the stovetop until tender, and cut into small florets.
  3. Cook the bacon on a skillet for 3-4 minutes on each side, and break apart into tiny pieces.
  4. In a large measuring cup add the Just Egg, veggies, bacon, cheese, and spices. Mix together until well-combined.
  5. Fill the muffin cups until about 1/2 way full with the Just Egg mixture. You should be able to make 12 egg bites.
  6. Bake for 20 minutes, and allow them to cool slightly before removing them from the muffin tin.
  7. Enjoy the egg bites on their own or with some hot sauce!

Notes

These egg bites are completely customizable! If you don't want to add the vegan bacon or cheese you can totally omit it. You can also swap in or out any vegetables.
