Description
These vegan funfetti protein bites are full of plant-based protein and only 8 ingredients. They are a yummy no-bake snack that basically tastes like you're eating cake batter right out of the bowl!
Ingredients

- 1 cup oat flour
- 1/4 cup vegan vanilla protein powder (I typically get mine at Sprouts)
- 1/4 teaspoon salt
- 1/3 cup maple syrup
- 1/3 cup almond butter (or any nut butter or sunflower butter you prefer)
- 2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- 2 tablespoons of sprinkles
Instructions
- Add the oat flour, protein powder, and salt to a medium-sized mixing bowl and stir to combine.
- Pour in the wet ingredients (maple syrup, almond butter, vanilla extract, almond extract) and mix until everything is well combined.
- Fold in the sprinkles and stir until they are evenly distributed. You can add more or fewer sprinkles based on your preferences.
- Scoop a heaping tablespoon of batter, and roll it between your hands to form balls. Repeat until you've used up all of the batter.
- Enjoy these protein bites immediately or place in the refrigerator for 20 minutes to chill if you prefer.
Notes
If your batter is too dry, add a little more almond butter or maple syrup. If your batter is too wet, add a little more flour.
If you are really a sprinkle lover, pour extra sprinkles into a small bowl and roll each protein ball in the sprinkles!
