Description

With a perfect balance of fresh, crunchy veggies and a creamy, decadent cheese topping, these Vegan Cucumber Bites are the ideal hors d’oeuvres for any party. Made with fewer than 10 ingredients and exactly zero cooking, they’re the low-lift, high-reward snack you’ve been looking for!


Ingredients

  • 1 English cucumber
  • 4 oz. vegan cream cheese, at room temperature
  • 2 tablespoons vegan sour cream or vegan Greek yogurt
  • 1 tablespoon fresh dill, finely chopped
  • 4-6 fresh mint leaves, finely chopped
  • 1/2 teaspoon garlic salt
  • 1 teaspoon chives for garnish, finely chopped
  • Black pepper for garnish
  • Optional: 12-15 cherry tomatoes, sliced in half lengthwise

Instructions

  1. Wash and peel the cucumber if you'd like (I personally think unpeeled looks pretty for this appetizer). Slice the cucumbers into 1/2" thick rounds. Then, using a teaspoon, scoop out some of the seeds in the center of each cucumber to make a small well.
  2. In a mixing bowl, combine the cream cheese, sour cream, dill, mint, and garlic salt, and mix until smooth and creamy.
  3. Place the cream cheese filling into a piping bag with a star tip. If you don't have a piping bag, you can use a plastic baggie with the tip cut off. Pipe about a teaspoon of the filling into the well of each cucumber.
  4. If using cherry tomatoes, slice them in half and place them into the cream cheese filling.
  5. Sprinkle the cucumbers with chives and black pepper, and serve!

Notes

If you are having a large party or gathering, you can double or even triple this recipe!
