A simple recipe for vegan French toast with Just Egg that only requires 10 ingredients. Perfect for a Mother's Day brunch!

- 10 slices of thick bread*
- 1/2 cup Just Egg
- 1 cup plant-based milk (I used Good Karma Flaxmilk because it's super creamy)
- 1 tablespoon vanilla extract
- 1 tablespoon agave
- 1 teaspoon cinnamon
- 2 tablespoons brown sugar
- 1/4 teaspoons salt
- 1/4 cup flour
- 4 tablespoons vegan butter
- Topping options: maple syrup, powdered sugar, fresh fruit, Nutella, whipped cream, jam
Instructions
- Whisk together the eggs, milk, vanilla extract, agave, cinnamon, brown sugar, and salt together in a low, flat-bottomed baking dish.
- Once combined, slowly add in the flour and whisk until completely smooth.
- Soak each piece of bread for about 15-20 seconds on each side.
- Heat a nonstick pan or skillet over medium heat, and melt a little butter in the pan.
- When the butter starts to bubble, place two pieces of toast in the pan. Cook until golden brown for about 3-4 minutes on each side.
- Serve warm and with any toppings of your choice!
Notes
Texas Toast, Ciabatta, or French Bread would all work great in this recipe. You want a sturdy bread that is about 3/4-inch thick, so the bread doesn't get completely soggy and fall apart when you soak it in the egg mixture.
I find you get the best result if you wipe the pan clean between each cooking session and add a bit more butter to grease the pan.
