- Nut Butter - The runnier, the better! Feel free to use the nut butter of your choice like peanut butter, almond butter, or cashew butter. You can also make these bad boys nut-free by swapping in seed butter like tahini or sunflower seed butter.
- Maple Syrup - This is typically my liquid sweetener of choice, especially now that it’s fall. It adds tons of sweet goodness without any refined sugar! Feel free to swap in agave nectar or brown rice syrup if you prefer.
- Vanilla Extract - For a rich depth of flavor. You can also use vanilla powder or paste if that’s what you have on hand.
- Rice Crisp Cereal - Want in on a little secret? You don’t have to buy name-brand cereal to get a high-quality product! Grab the store brand and save yourself some hard-earned cash.
Pro Tips For Chocolate Vegan Rice Crispy Treats
Are Rice Krispies vegan? This all comes down to how strict you are with your veganism. Technically speaking, Kellogg’s Rice Krispies are not 100% vegan because they have sugar (which can sometimes be filtered with bone char to make it whiter) and small amounts of vitamin D3 (which is derived from the oil on sheep’s wool).
I personally prefer to use One Degree Organics Brown Rice Crisps and Nature's Path Crispy Rice Cereal because they are both certified vegan, so I don’t have to worry about it!
Can you freeze rice krispie treats? You sure can! This vegan rice crispy treats recipe can be stored in the freezer for up to a month.
How to store vegan rice crispy treats: Once cooled and cut, I suggest storing your chocolatey goodness in an airtight container or zip-top bag in the fridge for up to a week (if they last that long!!) or in the freezer for up to one month.
How To Make Vegan Rice Krispie Treats
This vegan rice krispies treat recipe comes together in a snap. Here’s how it’s done:
Add the chocolate chips to a large microwave-safe bowl and microwave in 30-second intervals until completely melted. Immediately, pour the nut butter, maple syrup, and vanilla extract into the melted chocolate and stir until smooth.
Add the rice krispie cereal and mix until all of the cereal is coated in the chocolate mixture.
Transfer the mixture to an 8x8 baking pan lined with parchment paper. Place another piece of parchment paper over top and use the bottom of a glass to pack down the mixture into an even layer.
Freeze for 30 minutes to allow the rice krispie treats to set before slicing them into 9 squares.
Store in the refrigerator for up to a week (if they last that long) or in the freezer for up to one months.
