    Strawberry Lime Popsicles

    Cool down on a hot summer day with these citrusy strawberry lime popsicles! These popsicles are super refreshing and have some sweetness from the strawberries and maple syrup and a little bit of citrus from the lime.

    There are few things more delicious and refreshing than a nice fruity popsicle on a hot day! This vegan recipe for easy, fruit-filled strawberry lime popsicles will transport you right back to childhood—guaranteed!

    This refreshing and simple recipe is going to become a new favorite of yours as you can easily whip them up anytime. 

    Double the recipe to always have strawberry lime popsicles on hand whenever the craving on a hot summer day strikes! These are one of my favorite frozen treats for summer, along with these chocolate-dipped ice cream bars, strawberry banana popsicles, and healthy chocolate milkshake!

    Popsicle Ingredients

    • Fresh strawberries – Did you know the strawberry we all eat today is actually a European hybrid of two other varieties (Chilean and North American)? These delicious, bright red berries pack a ton of vitamin C and manganese and they’re also a good source of folate (B9) and potassium. They’re also rich in antioxidants! 
    • Coconut water – Coconut water is a nutritious alternative to regular water and helps add some more flavor to this recipe. Have you ever wondered about coconut water and coconut milk? Coconut milk is actually a combination of coconut water and actual coconut flesh. Coconut water happens to be full of electrolytes like potassium, sodium, and magnesium, meaning its use in this popsicle recipe can help you better rehydrate on long, hot day! 
    • Lime juice and lime zest – Limes are a citrus fruit that carry many of the benefits typically associated with citrus. That means you can count on high amounts of vitamin C as well as trace amounts of many other nutrients, including iron, calcium, vitamin B6, thiamin, and potassium. Limes also contain antioxidant compounds such as limonoids, quercetin, and ascorbic acid. Plus, they’re delicious!  
    • Maple syrup – Maple syrup is a delicious sweetener, as we all know from pancakes. That said, it’s a great vegan sweetener in general. While it might not necessarily be all that much healthier than regular sugar, it does at least contain some minerals and antioxidants, including high amounts of manganese and zinc.

    Steps to Make Popsicles

    These popsicles only take about 5 minutes to make, and then you just have to wait for them to freeze!

    Put the strawberries, coconut water, lime juice, and maple syrup into a high-speed blender and blend until completely smooth.

    Add the lime zest to the blender (and mint leaves if using) and pulse a couple of times until incorporated. Taste and adjust any flavors if needed depending on if you want the popsicles sweeter, more lime flavor, etc.

    Pour the mixture into the popsicle mold, leaving a little room for the popsicles to expand. Place popsicle sticks in the center and freeze for 4-6 hours or until solid.

    When ready to serve, run the popsicles mold under warm water to remove the popsicles from the mold.

    Store in your freezer for up to 3 months!

    Recipe Add-Ins and Substitutions

    For extra fancy popsicles, you can thinly slice a few strawberries and put them into the popsicle molds before pouring the blended mixture into the molds.

    You can also add more maple syrup if you prefer a sweeter popsicle. The sweetness level will also depend on the type of water/plant-based milk that you use. 

    If you like Mexican-style fruit (fruit plus lime plus chili powder), then you can simply add some Tajin or another chili seasoning that you prefer to the popsicle mixture! 

    Mint is another great addition that really works well with the lime. 

    If you like, you can omit the strawberries to make limeade popsicles. You can also replace the strawberries with any other fruit you might prefer! Mango or watermelon are two fruits that would go great with lime.

    If you don’t like coconut or are allergic to it, you can simply substitute water or any plant-based milk instead. The creamier the milk that you use, the creamier the popsicle will be. So, if you want a really creamy popsicle, opt for something like oatmilk or even coconut milk.

    What is the Best Popsicle Mold?

    I generally prefer silicone molds (like this one I own) because they tend to have more give when you want to remove the popsicles. Take care though when you fill them. I always put the mold on a small baking tray that will fit into the freezer so that the liquid doesn't spill everywhere.

    If you’re having trouble getting the popsicles out once they’re frozen, simply run the bottom of the mold in warm water until they loosen up. 

    And if you don’t have popsicle molds and still want to make these, no worries! You can just use paper cups instead.

    How Do You Store Popsicles?

    Good question! You can simply keep them in the mold and then remove them when you’re ready to enjoy. The popsicle mold I have actually came with some plastic baggies to store popsicles in. Or, if you prefer, you can place them in a baggie in the freezer.
